Privilege and Implicit Biases in the Nutrition Profession

Session Summary: Throughout the last 100 years, diet recommendations and the nutrition profession reflect privilege and systemic bias, which continues to blame, subjugate, and marginalize people of color (especially Asian Americans) and negatively impact public health goals and outcomes.
In this session, Dr. Burt will share the history of the profession and use the Mediterranean Diet and Monosodium Glutamate recommendations as primary examples of covert bias. To achieve health equity, we must identify the myriad forms of bias impacting the profession, understand the visible and invisible ways different persons are impacted by bias, and take specific actions to create a more equitable health and food system.
Professor Siew Sun Wong will present her 28 years of journey in the U.S. as an English as Second Language (ESL) student and later a minority faculty in the field of nutrition. Through her personal stories from experiencing implicit biases in Dietetics education, classroom discrimination, and promotion and tenure derision, she will share seven lessons learnt as a survival guide for Asian immigrants. Using the Center for the Improvement of Mentored Experience in Research (CIMER) curriculum, attendees will get to share their stories, their "I like, I wish, I wonder" and best practices. The session will conclude with a celebration of transformation.

Whether searching the web for a new recipe or dining out, we've all come across the ""Asian-Inspired"" menu descriptor. Food bloggers, chefs and registered dietitian nutritionists all have been guilty of slapping this moniker on a dish to which they've simply added soy sauce or sesame seeds. Spread across 48 countries, there's much more to Asian cuisine than dashes of condiments.
This session features a diverse array of Asian registered dietitian nutritionist speakers, all of whom have expertise with providing culturally sensitive Asian cuisine information. This presentation will educate attendees on the five distinct geographical regions of Asia and the respective ingredients commonly used in each area's cuisine. This panel will provide the vital knowledge registered dietitian nutritionists, chefs and food bloggers need to know in order to provide informed Asian culinary guidance. It will also give attendees the confidence to develop Asian cuisine recipes and content that are regionally informed.

The Urgency of Awareness: A Workshop on Communicating More Effectively Across All Demographics

Session Summary:
Food and nutrition impact every person regardless of age, gender, ethnicity and religious affiliation. It’s important to acknowledge that our age, ethnicity and gender all effect how we may use food and view nutrition.
Dietitians are inherently passionate about ensuring individuals are more aware of nutritional importance and have access to healthy food. But, how does our own experience of food impact how dietitians present our information? In the book Urgency of Awareness, we look at 18 sets of diversity. We explore 18 ways we may have experienced our societal system differently than others, thus giving us a broader understanding of how others might view food and nutrition.
If we want to maximize our efforts, we must:
- Become aware of where we have been part of societal norms and where we have not. We need to process how our own personal experiences impact how we use food and view nutrition – and then acknowledge how that may differ for other individuals.
- Tap into the wisdom of, become more involved in, and inform people of the work and mission of the MIGs. Even if we identify with a gender, ethnicity or age that is not the dominate, there are likely places within our life where we are part of the normalized dominate. Educating ourselves and others about the many identities people hold will help better understand how people might view food and nutrition.
- MIGs can bring awareness to offering concrete and helpful ways to incorporate the view and experience of individuals who are not living the normalized experience. For example: when someone does not have access to fresh food due to earning an income that is lower than a livable wage, remember to offer affordable, accessible, and nutritious food options that are widely available and meet the person’s physical and ethnic needs, as well as their preferences.
